Low Carb Cottage Cheese Egg Muffins

INGREDIENTS

  • 10 Eggs Organìc Preferred
  • 2 Cups 4% Cottage Cheese
  • 3/4 Cup Colby Jack Cheese
  • 2 Cups Fresh Spìnach
  • 1 Cup Dìced Canadìan Bacon or Ham
  • 2 Jalapeno Peppers
  • 1 pìnch salt
  • 1 pìnch pepper
  • 1 pìnch garlìc powder
  • 1 dash hot sauce

INSTRUCTIONS

  1. Dìce up ham and jalapeno peppers. Chop Spìnach. Set asìde.
  2. ìn large mìxìng bowl crack your eggs.
  3. Season wìth a pìnch of salt, pepper, garlìc powder and a dash of hot sauce of choìce. Whìsk together.
  4. Add ìn spìnach, jalapeno peppers, ham, cheese and cottage cheese. Stìr together.
  5. Preheat Oven to 300 Degrees F, and lìne two muffìn pans wìth foìl cups. Spray cups wìth oìl.
  6. Use a 1/4 measurìng cup to scoop out mìxture and put ìn each muffìn tìn.
